Preheat oven to 425°F. Toss together potatoes, olive oil, Greek seasoning, salt and pepper. Arrange in single layer on foil-lined baking sheet; bake for 30 to 35 minutes or until golden brown and tender.
Divide fries among 4 plates. Top with lettuce, tomatoes and olives. Drizzle with tzatziki sauce. Sprinkle with feta, red onion and parsley.
