Vegan Funeral Potatoes
This vegan version of a classic Midwest casserole, popularly served as a side dish at funeral luncheons, is just as yummy as the original.
Ingredients
- 3 large Washington State Russet potatoes, scrubbed (peels on)
- 1 tsp vegetable oil
- 1/4 cup vegan butter
- 2 onions, thinly sliced
- 4 cloves garlic, minced
- 1 1/2 tsp salt, divided
- 1 tsp black pepper, divided
- 1 cup vegan sour cream
- 1/4 cup finely chopped fresh chives, divided
- 2 tbsp freshly squeezed lemon juice
- 1 tbsp nutritional yeast (optional)
- 3 cups shredded vegan Cheddar cheese, divided
- 1/2 cup panko bread crumbs
- 2 tbsp olive oil
- 1/4 tsp paprika
- 1/4 tsp garlic powder
