Potato Quesadilla
Filled with fluffy mashed potatoes, savory ground beef and ooey-gooey cheese, these crispy-fried quesadillas are served with a rich tomato- guajillo salsa accented with peanuts.
Ingredients
- 1 1/2 cups dehydrated potato flakes
- 2 dried guajillo chile peppers
- 1/2 cup tomato purée
- 2 plum tomatoes, cored and quartered
- 1/2 cup diced onion, divided
- 1/4 cup toasted peanuts
- 2 cloves garlic, minced and divided
- 3 tbsp olive oil, divided
- 3/4 tsp salt, divided
- 3/4 tsp black pepper, divided
- 10 oz lean ground beef
- 5 oz shredded panela cheese or mozzarella (about 2 cups)
- 8 flour tortillas (7 inches)
- Canola oil, for frying
