Baked Potatoes
  1. Preheat the oven to 350°. Scrub and dry the potatoes. Pierce each potatoes 8 times with a fork and place in a bowl. Rub with canola oil and sprinkle with kosher salt. Place directly on a rack in the lower half of the oven and bake for 1 hour.
Garam Masala Lamb
  1. In a medium-sized saucepan heat the oil over medium-high heat. When the oil is hot, add the onion and sauté until the onion is beginning to soften. Add the jalapeno and sauté for 2 minutes. Add the garam masala and cook for 1 minute, till the spices become fragrant. Add the ground lamb and add salt and pepper. Cook, stirring infrequently to ensure the lamb browns nicely, until the lamb is cooked through.
Ginger Yogurt
  1. Place yogurt and ginger in a bowl and mix until combined.
  2. Place garam masala lamb on baked potato and top with ginger yogurt and enjoy!
