Showing Off Washington Spuds!

Last fall the Washington State Potato Commission (WSPC) sent out the challenge to all culinary students at accredited ACF culinary programs throughout the state.  The mission was for them to show off their creativity with Washington State potatoes, an in return earn cash prizes for top entries. The submissions have come in and the top 6 finalist, will meet up for a cook off later this month in the culinary center at Renton Technical College.

After preparing their recipe each student will present their dish to a panel of judges comprised of award winning chefs, restaurant owners and industry publications.  The panel will be looking for creativity, flavor, presentation, use of potato and/or potato products and menuing probability in a professional kitchen/food service venue. Students were able to create a recipe using fresh or processed (e.g. frozen, dehydrated) Washington potatoes.

Each of the submissions are being reviewed and graded to narrow the field of entries down to the top six.  Some of the interesting dishes thus far include; Washington potato croquettes stuffed with a spicy Thai curry, buffalo flavored twice baked Washington potatoes and crispy Washington potato and lentil cakes.

The overall winner will take home $1,000, second place will receive $500 and each of the four runner ups will be awarded $250 each.  Each of the finalists will also have their recipe featured in a recipe book that the Washington State Potato Commission will develop.  Additionally, the finalists will have their recipe receive local media awareness and publicity in foodservice magazines.  We will be sure to share the winning recipe and other top dishes, photos, videos and other coverage of the competition in the upcoming weeks!
